South Australian Pizza Recipe: Teresa Palmer-Giana

The Teresa Palmer-Giana – a good egg of a pizza, named after the Adelaidian star of Hacksaw Ridge and Warm Bodies. This pizza recipe is a tasty homage to Teresa and just like the young actor, it’s a rising star.

We roped in Jessie Spiby (MasterChef 2015 contestant and cook behind Jessie Does Food) to help us craft the dream slices and teamed up with our friends at Foodland Thebarton and Eatilly, who kindly provided us with local ingredients and use of their in-store pizza oven. It’s a Mother Teresa of a pizza that you’ll really want a slice of.

1 Riviera Bakery Pizza Dough Base
3 eggplants, sliced lengthways
60ml (1⁄4 cup) Beerenberg extra virgin olive oil, plus extra, to drizzle
2 garlic cloves, thinly sliced
2 x 125g La Casa Del Formaggio’s Mozzarella, drained, sliced
20g (1⁄4 cup) parmesan, finely grated


Preheat oven to 220°C.

Thinly slice eggplants lengthways, and lay on baking paper. Drip olive oil and season with salt and pepper. Bake for 20 mins, then flip eggplant over and bake for a further 20 minutes.

Roll base to approximately 12 inches diameter. Spread pizza sauce on base, followed by the eggplant, Beerenberg  minced garlic, parmesan, mozzarella and fresh basil leaves.

Cook in the oven for 10 to 12 minutes, depending on desired crispiness. Slice pizza and serve.
